Cake for the Year of Dog¡G

Body¡G9" cake dummy.

Decoration¡G fondant, royal icing, color paste, luster dust (super gold and rouge flambe), and grain alcohol.

Tools¡G rolling pin, piping bag, tip#1 & #L1, wax paper, and brush.

When I was thinking of making a cake for Chinese New Year, I found it is so difficult to express the spirits of Chinese culture by using the typical cake decorating skills and designs... since "cake" itself is a western form of celebration. Suddenly, something came to my mind that I might be able to use royal icing to create the traditional Chinese paper-cutting pattern on the cake.

I spent about 2 hours on drawing the pattern, and then used red royal icing to trace it on a piece of wx paper. On the next day, cover the cake dummy with rolled fondant, and then brush with gold dust (dissolved in grain alcohol). At last, put the paper-cut icing on top and made 4 Chinese knots on bottom to cover the edges.

Gold and red are the traditional colors for Chinese New Year. Wish everyone a prosperous and happy new year!!
